It's been a busy summer, but I'm back to posting on the blog after being MIA.
Last week, W. and I cooked dinner for his parents. He was craving lettuce wraps. So, I emailed one of my best girlfriends to get her amazing lettuce wrap recipe. We decided to keep the theme going with the rest of the meal, so I threw together some shrimp spring rolls. Thank you to Cooking Uncorked for the recipe!
I loved these shrimp spring rolls, because not only are they fresh, but they are relatively healthy. W. on the other hand prefers more of a crunch, his request is to try them with a wonton wrap and bake them. I'll let ya'll know how it goes :)
