Salmon, or fish for that matter, is something that I always want for dinner, but never buy because it's too pricey for my budget. But, with lent, most grocery stores have deals going on right now for fish and seafood. I was so excited when I saw how cheap the salmon was at Cub because I'm starting to get real sick of chicken and ground beef meals.
Fish is something I've never actually cooked on my own with the exception of crab legs for Valentine's Day. My mother can cook just about anything and everything, so I was nervous to see how my fish turned out compared to hers. But, with this simple recipe, my salmon turned out perfect! It was just the right amount of lemon, and to my surprise, it wasn't dry at all.
First, grab all of your ingredients and supplies:

- Salmon Filet
- Butter - about 1TBS, but as much as you prefer
- 1 Lemon
- Olive Oil, about 2 tsp
- Salt and Pepper to Taste
- Tinfoil
- Baking Sheet
First, lay out your tinfoil on the baking sheet. Tinfoil should be about the size of the pan. Next you will want to slice your lemon. I cut the slices about a 1/2 centimeter thick. The tablespoon of butter was sliced into three small pads.
After prepping everything, it's time to put it all together. Lightly oil up your salmon on both sides to ensure the fish doesn't stick to the foil. Place salmon, scale side down, on the foil. Salt and pepper the fish to your liking. Follow that up with the lemon slices and pads of butter. *Note, you will see people doing this different ways. Some people place the lemon slices underneath the fish and the butter on top. I prefer the butter on top because not as much seeps down into the fish then.

After your fish is all prepped, it's time to wrap it up. An easy way to seal the salmon in foil is to bring the long ends of the foil together at the top, then roll the foil down and finally fold the sides in... did that make sense? Well, I hope it did, but if not, here is a picture. Fold the foil whatever way is easiest for you, just make sure that air can't escape.
Finally, it's time to put it in the oven. Cook it at 350 degrees for 20 - 25 minutes.

Carefully unwrap the hot foil, and enjoy!
Salmon with Lemon
1 Salmon Filet
2 tsp Olive Oil
1 Lemon, cut into 1/2 cm slices
1 TBS Butter, more or less to your liking, cut into small pads
Salt and Pepper to taste
Preheat oven to 350F.
Lightly oil both sides of salmon and place on tinfoil. Salt and pepper the fish.
Lay lemon slices on top of salmon, followed by the pads of butter.
Fold foil so no air escapes, place on a baking sheet.
Bake for 20 - 25 minutes.
